Sous Vide Tritip

I cooked with my sous vide cooker for the first time. I cooked a 2.5 pound tritip that was in a marinade from the grocery store. It came in a sealed bag so I just put the whole sealed bag in the sous vide bath.

I cooked it at 135 degrees for 9 hours. Then I seared it for 2 minutes on each side on the big green egg at a very high temp. I intended to only cook it about 7 or 8 hours but was too busy to finish it at that time.

It was really good. It was darker than pink so some people might prefer it more rare. Other recipes online said 9 hours is too long for tritip. But I liked how it came out.
